This Australian Wagyu Steak cut comes from the rib section and is located between the chuck and loin. The tomahawk has three major muscles. The center eye, a smaller side muscle and the what is also called the cap of the ribyeye or deckle. The cap is known as the most flavorful and tender cut. The muscles of the ribeye have rich fat between them.

How To Cook Wagyu Tomahawk: 

For maximum experience simply add kosher or sea salt and fresh ground pepper to the steak then just grill it over direct heat until the internal temperature is 125ºF to 130ºF degrees for medium-rare or 130ºF to 135ºF degrees for medium. (Do Not Over Cook) Let your steak rest for 5 to 10 minutes before cutting it.
