    What is Wagyu Beef?

    It only takes one bite of Wagyu to experience true luxury served on a plate. This intense experience includes the buttery flavor of its signature marbling and absolute tenderness. 'Wa' means Japanese and 'gyu' means cow and the name translates into Japanese cattle.

    What Makes Wagyu Beef Special?

    The cows were originally prized for their physical endurance. They are fed a diet for 2 years that includes fresh grass, alfalfa and rice straw. Each of these cows can can cost $30k in comparison to a regular cow that is priced around $2,500.  These cows are known for their exceptional fat content and though many people don't know this, Wagyu beef has a lower cholesterol count than chicken or turkey.

    The Japanese Meat Grading Association ranks beef quality on fat quality, marbling, texture, color, firmness and brightness of the meat.  When the meat has more marbling it means it is tender, has a creamier texture, and it's the reason why wagyu beef is the high prize. The higher the Beef Marble Standard score "BMS" the more expensive the beef.  In Japan, a BMS of 8 to 12, is given the world reknown A5 stamp.

    Australian Wagyu comes from breeding a full-blooded Wagyu Sire and an Angus Dam. This crossbred first generation has 50% Wagyu genes. Australian beef ranchers pride themselves on their reputation and experience in the cattle industry.  They created a meat so unique and rare that know it is known as Wagyu X.

    Just as the Japanese Beef, Australian Beef tenderness, juiciness and richness is determined by BMS. Australian grading score tops out at 9 with everything above it denoted as 9+ in some cases.
